Every time my kids notice that my bananas are getting over ripe, they beg me to made these muffins.
It’s so hard to choose!! This last time I did some of each – loaves and muffins.
Chocolate Chipe Banana Bread (or muffins)
Ingredients:
1 3/4 cups flour
3/4 sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 egg
1/2 cup vegetable oil
1/2 cupe plain yogurt
1 tsp vanilla extract
1 cup mashed ripe bananas
3/4 cup semisweet chocolate chips
Directions:
In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt. In another bowl, combine the egg, oil, yogurt, and vanilla. Sir wet ingredients into dry ingredients, just until moistened. fold in bananas and chocolate chips. Fill greased or paper-lined muffin cups 2/3 full. Bake at 350 for 22-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
I love this recipe. One day I unknowingly ran out of yogurt, so I improvised and used Daisy light sour cream. I did not think this recipe could get any better, but it did. So amazing!!!
