Brownie Ice Cream Cupcakes

You have to try these Brownie Ice Cream Cupcakes some time!  Follow the simple instructions below and enjoy!

Place foil cupcake liners* into a cupcake pan.  Make a brownie mix following the instructions on the box.  Spoon 1 tablespoon batter into each liner in the cupcake tray.  One regular “family size” brownie mix will give you about 36 cupcakes.  Bake at 350 degrees for 12-15 minutes or until a toothpick comes out clean.  Let cool completely.  Get ice cream out of freezer and let soften.  Place soft ice cream in a bowl and stir until smooth.  Spoon ice cream into each cupcake.  Place in freezer until hard.  Take out of the freezer and enjoy!

*Side note: if you use paper cupcake liners, the brownie doesn’t come out very good.  We found that if you place them in the microwave for about five seconds then they come out easier.  But the easiest way is just to use foil cupcake liners because they peal off without any trouble.

Our family loves vanilla ice cream with brownies, but you can try any flavor!  Try mint chip ice cream with brownie cupcakes and sprinkle Andes Mint Chips on top.  YUM!

4th of July M&M Cake Mix Cookies

Here is a simple dessert idea for you to share with your family and friends on the 4th of July!  Cake Mix Cookies.

4th of July M&M Cake Mix Cookies

  • 1 box chocolate cake mix
  • 1/2 cup oil (I use canola)
  • 2 eggs
  • 1 cup M&M’s (red, white, and blue)*

Combine cake mix with oil and eggs.  Mix together.  Add m&m’s.  Drop balls of cookie dough onto an ungreased cookie sheet.  Bake at 350 degrees for approximately 9 minutes.

*To get just red, white, and blue m&m’s I went to my local party store.  They have an m&m dispenser sorted by color.  You can get just the right amount of m&m’s and get the colors you want too!

Another idea for a holiday treat is Patriotic Pretzel Hugs!

Super Moist Chocolate Cake Recipe

I promise you will love this recipe for Super Moist Chocolate Cake.  It’s easy to make, and it stays yummy for days!  I may never make a regular cake mix again!  The trick to this recipe is that it isn’t from a chocolate cake mix… it’s a yellow cake mix with chocolate added.  So simple, but so yummy.

Super Moist Chocolate Cake

1 yellow cake mix
2 eggs
2 cups warm water
1 small box instant chocolate pudding
16 oz container of Cool Whip
4 Skor candy bars

Combine dry cake mix, eggs, water, and dry pudding in a large bowl and mix with an electric mixer.  Pour into greased 9×13 glass dish.  Bake at 350 degrees for 25-30 minutes.

After the cake cools, frost with cool whip and top with chopped Skor candy bars or your favorite candy bar.

Seriously, this cake stays yummy and moist for days!  I hope your family loves it as much as mine did!
