Freezer Corn Recipe

I have been working hard this week trying to keep up with the harvest of my garden.  We planted a lot this year, so I knew I would have a lot of work ahead of me.  I’m learning a lot.  The hardest part for me is that I don’t have a collection of recipes for pickles, salsa, etc…. that I love.  So, I’m trying a few different recipes to see which ones I love the most.  So far this week I’ve made pickles, zucchini bread, salsa, and freezer corn.

Freezer corn is my favorite because I have a recipe we love.  It’s quick and easy too!

1. Remove husks
2. Wash corn
3. Cut corn off cob
4. Cook corn with other ingredients
5. Put corn in freezer baggies
6. Quickly put bags of corn in the freezer
7. Enjoy fresh corn all year long!

Freezer Corn Recipe
9 cups corn cut off the cob
1/4 cup sugar
1/2 cup water
1/3 cup butter
1 tsp salt

Cook on high.  Let boil 5 minutes.  Put in baggies, and quickly put into freezer.

A few tips:
*When we planted our corn, we first planted 4 rows.  In two weeks, we planted 4 more rows.  This way, we don’t have ALL the corn ready at the same time!  Thank goodness.
*It took us about 15 ears of corn to get 9 cups of corn off the cob.
*We put 2 (plus a little) cups in each quart size baggie, making 3 baggies per batch of corn cooked.
*My husband loves his sharp knife for cutting, but this year we used a tool that I borrowed from my cousin and we loved it!  If you are doing a lot of corn, THIS might be a good investment.
