This last weekend we spent time with family for Memorial Day. My Aunt Janet made a terrific lunch for us on Sunday! All of us asked for the recipe before we left the table! I am not usually a huge Chili fan, but this soup had a wonderful flavor. She served it with wheat rolls and cheese slices. YUM.
Here is the recipe! Enjoy!
1-2 chicken breasts (cubed and cooked)
1 Tbsp minced onion
1 1/2 tsp garlic powder
1 can chicken broth
1-2 cans diced green chilies (1 7 oz or 2 4oz)
1 cup water
2 cans white beans
1 1/2 c. Sour cream
1 can evaporated milk
1/2 tsp cayenne pepper
1 can cream of chicken soup
2 cans mexi-corn
1 tsp cumin
1 tsp oregano
Mix all ingredients together in a big pot. Simmer for 20 minutes.
