Jello Poke Cake

I had a birthday recently, and my friend Heather was visiting.

Growing up we spent every birthday together with chinese take out, treats, a movie, and of course- cake.  (Okay, not the healthiest.. but we were teenagers..)
While she was at my house, she said, “Remember that yummy cold cake with the Jello your mom used to make?” 
Of course I remembered… and for reminiscent sake, Heather made me a jello poke cake for my birthday.
It was so yummy!
For this cake, we got the recipe from the Betty Crocker Website.
Jello Poke Cake
1 box Betty Crocker® SuperMoist® white cake mix
1 1/3 cups water
1/2 cup vegetable oil
3 egg whites
1 package (4-serving size) strawberry- or raspberry-flavored gelatin
1 cup boiling water
1/2 cup cold water
Fresh strawberries or raspberries, if desired
Cool Whip

    Heat oven to 325°F. Place rose shape bottom in Betty Crocker® Bake Art springform pan. Spray bottom and side of pan with baking spray with flour. Make cake mix as directed on box using water, oil and egg whites. Pour batter into pan.

    Bake 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.

    Poke cake all over with fork. In small bowl, stir gelatin and boiling water until dissolved; stir in cold water. Pour over cake. Refrigerate 2 hours.

    Run knife around side of pan to loosen cake. Invert cake onto serving plate; carefully remove pan bottom. Garnish cake with berries. Store covered in refrigerator.

(we did not remove the cake before putting the cool whip and strawberries on it, we just did it in the pan for easier storing, and it worked great.)

  1. Kinda funny…but I made this yesterday. 🙂 Only I used a white cake mix with the addition of lime zest, lime jello, and a vanilla frosting with lime juice and zest. Yum!

  2. My aunt use to make this cake when I was growing up and I loved it! I bought all the ingredients I needed at the store tonight and I will be making this tomorrow! Can’t wait!! Brings back good memories

  3. I absolutely love the lime version of this cake! It would be fun with lemon, orange and any flavor!!
