Sweet and Sour Chicken

One of the favorite meals at our house (for all of us!) is Sweet and Sour Chicken.  My kids gobble it up.  These little chicken pieces are the perfect little chicken nuggets and would be yummy with any dipping sauce.

Sweet and Sour Chicken
4 chicken breasts or 10 chicken tenders
Canola oil for deep frying (375 degrees)

Batter:
1/2 c. flour
1/4 c. cornstartch
1 tsp. baking powder
1/2 tsp. baking soda
3/4 c. water (or a little less, if you want a thicker batter)

Cut chicken into bite sized pieces and dip into batter.  Fry in oil for 3 to 4 minutes until it’s cooked through.

Sauce:
3/4 c. sugar
2 Tbsp. rice vinegar
3 Tbsp. catsup
2 Tbsp. cornstarch
3/4 c. water

Mix ingredients and bring to a full boil; cool until thick.

To be honest, I don’t make the sauce.  🙂  We have found a great sauce that I can just buy – and we all love it.  I can usually find this at Macey’s grocery store.
