Zucchini Casserole

I love this time of year when my garden starts producing yummy veggies. Hooray! I’m excited!  Today I get to share with you our favorite Zucchini Casserole.

 Have you seen a cook book called Deceptively Delicious?  It’s great! Here are some of the examples of things that are in some of the recipes…

1-Black beans replace flour in chocolate brownies!
2-Cauliflower and winter squash are pureed to add into mac and cheese!
3-Cauliflower and no eggs in banana bread!
4-Garbanzo beans in chocolate chip cookies!

Are you totally grossed out yet?  You shouldn’t be! People have rated these recipes really high!
Anyway, this time of year I’ve pick a lot of zucchini. I’ve made bread, casserole and baked it with Parmesan cheese and olive oil–Mmm.
I wanted to share my favorite “Cottle Family” Zucchini casserole recipe with you.  Mmm!  It’s super healthy too.
 And the final product:

Here is the recipe:
2-3 small zucchini, chopped                                                       1 onion, chopped
3 carrots                                                                                    1 stalk celery, chopped
1 pkg. stove top stuffing mix                                                       1 can cream of chicken soup
1 lb. ground beef                                                                        1 cup shredded cheese
Make stuffing and put in 9×13 pan. Add browned hamburger and cooked veggies. Mix soup with 1 can water or milk. Spread on top of casserole and sprinkle cheese on top. Bake at 350 for 30 minutes.  Enjoy!
